Stuffed Beaver with All the Trimmings

These days we enjoy Beaver Tails. Did you know the tail of the beaver was considered a delicacy in pioneer times. Instructions for preparing, but not catching, are in a classic article from The Beaver, forerunner of Canada's History magazine. Read the article on Christmas feasting in pioneer Canada here. You might even be inspired to try a recipe.
Consider a gift subscription to Canada's History if you're still wondering what to give the Canadian genealogist.
